AN INVESTIGATION OF THE IMPACT OF ZONES OF ANTHROPOGENIC INFLUENCE ON PRODUCT SAFETY INDICATORS

The article provides an analysis of the results of research on the influence of anthropogenic factors on the safety indicatorsof animal products. Of particular interest in this study is the study of animals, which are a sensitive indicator of the initial stagesof heavy metal pollution. They accumulate elements in accessible "biologically active" forms and reflect the actual level ofpollution of ecosystems and, due to their close connection with soil conditions and limited habitat, can be good indicators ofchemical pollution of the biosphere. The author also examines the content of xenobiotics entering food from the externalenvironment along the following food chain: soil - plant - animal - human.
