ORGANOLEPTIC AND PHYSICO-CHEMICAL RATES OF DOMESTIC AND WILD REINDEER OF ANABAR DISTRICT OF YAKUTIA

The aim of the research is veterinary-sanitary inspection of meat of northern wild and domestic reindeer in the Arctic zone of the Far North. In order to achieve the goal, the following tasks were set: organoleptic examination of north and wild reindeer meat; analysis of its physical and chemical indicators. Two samples were taken from the reindeer herd of the municipal unitary enterprise «Spiridonov», samples of wild deer meat were extracted in the autumn period from licensed hunters of the Anabar district in Yuryung-Haya town. Research results have shown that the domestic reindeer meat matched the quality. Wild reindeer meat proved to be suspected.
