CSR Management in Sugar Industry of Northern and Southern China according to Water Footprint Criteria

The methodology of Water Footprint makes it possible to compare water intensity and efficiency of water management in sugar industry. It measures water footprint of sugar plant cultivation (green footprint), water footprint of sugar production and sugar plant processing (blue water footprint) and waste water footprint during sugar processing and distribution (gray water footprint). Based on the sum of the partial water footprints, the paper shows the resulting water footprint of one tonne of sugar. The authors use the case of present-day China to compare water footprints of beet sugar and cane sugar production. Beet sugar grown in North China has significantly lower water footprint (green and blue) than cane in the southern regions. Water footprint is a tool to measure the performance of CSR management that includes water conservation and sustainable development of agriculture in times of hazardous lack of fresh water in the future.
