A comparative study of casein protein from wild and hybrid cow’s milk: Its efficacy on antimicrobial and antioxidant potential.

The aim of the present study was to determine the quantitative and qualitative analysis of hybrid (Jersey) and wild type (Red Sahiwal) cow’s milk protein and its efficacy on antimicrobial and antioxidant activities. Protein content was high in hybrid compare to wild type. Bradford method showed the highest sensitivity for whole casein protein and BSA is used as a standard protein. Qualitative analysis of proteins using Native and SDS-PAGE, it shows distinct bands which were higher in hybrid compare to wild type. Anti-microbial activity was analysed with three different organisms such as Escherichia coli, Candida and Salmonella species. Results showed that hybrid has low antimicrobial and antioxidant activity compare to wild type.Â
