Influence of probiotic product on chemical composition of broiler chicken meat | Влияние пробиотика на химический состав мяса цыплят-бройлеров

Russian. Представлены результаты по изучению химического состава грудных и бедренных мышц цыплят-бройлеров при введении в их рационы пробиотика взамен кормового антибиотика. Исследуемый пробиотический препарат был разработан сотрудниками лаборатории отдела "Сибирский НИИ сыроделия" ФГБНУ "Федеральный Алтайский научный центр агробиотехнологий" и включает в себя многоштаммовую культуру пропионовокислых бактерий вида Propionibacterium freudenreichii spp., взятых из Сибирской коллекции микроорганизмов. Научно-хозяйственный опыт проводили в условиях птицефабрики ООО "Кузбасский бройлер". Для опыта были сформированы 2 группы (контрольная и опытная) суточных цыплят по 198 гол. в каждой. На протяжении всего эксперимента птица обеих групп получала полнорационные комбикорма. Отличие между группами заключалось в том, что с 5-го дня цыплятам контрольной группы к корму добавляли кормовой антибиотик, а в опытной группе – жидкий пробиотик на основе пропионовокислых бактерий. Начальная дозировка пробиотика составила 0,65 мл на 1 гол. в сутки, постепенно с ростом цыплят её увеличивали до 3,9 мл. Убой птицы был произведен в возрасте 39 дней. С помощью общепринятых методик зоотехнического анализа отобранные образцы мяса (бедренная часть и грудка) исследовали на содержание влаги, сухого вещества, протеина, жира и золы. По полученным данным использование пробиотика при выращивании цыплят оказало положительное воздействие на химический состав мяса и способствовало повышению его биологической ценности.

The research findings of the chemical composition of the pectoral and femoral muscles in broiler chickens when probiotics are introduced into their diets instead of feed antibiotics are presented. The probiotic product under study was developed by the team of the Siberian Research Institute of Cheese Making of the Federal Altai Scientific Center of Agro-Biotechnologies. It comprises multiple-strain culture of propionic acid bacteria of the Propionibacterium freudenreichii spp., species received from the Siberian Collection of Microorganisms. The scientific and economic experiment was carried out on the poultry farm of the LLC "Kuzbasskiy broiler". To conduct the experiment, 2 groups (control and trial) of day-old chickens, 198 heads in each were formed. Throughout the experiment, the chickens of both groups received complete feeds. The difference between the groups was as follows: from the 5th day, the chickens of the control group received a feed added with a feed antibiotic, and in the trial group - the liquid probiotic product based on propionic acid bacteria. The initial dosage of the probiotic was 0.65 mL per a head per a day, gradually with the growth of chickens it was increased to 3.9 mL. The chickens were slaughtered at the age of 39 days. Using the conventional methods of zootechnic analysis, the meat samples (thigh and breast) were examined for content of moisture, dry matter, protein, fat and ash. According to the data obtained, the use of the probiotics in raising chickens had a positive effect on meat chemical composition and promoted increasing biological value of meat.
