Total antioxidant activity of cottage cheese with buckwheat processing products | Суммарная антиоксидантная активность творожного сыра с продуктами переработки гречихи

Russian. Исследовали возможность повышения суммарной антиоксидантной активности (САО) творожного сыра (ТС) за счет введения в его рецептуру отрубей гречихи (ОГ) в количестве 15% от массы ТС. ОГ получали из семян термически необработанной гречихи с которых была удалена оболочка (лузга). САО определяли методом кулонометрического титрования в гальваностатическом режиме по сертифицированной методике на кулонометрическом анализаторе "Эксперт-006-антиоксиданты" производства РФ. Образцы ОГ, ТС и ТС с ОГ заливали дистиллированной водой в равных пропорциях на 30 мин. Набухшие образцы растирали в ступке до однородной консистенции и затем гомогенизировали. Гомогенизированную смесь дважды пропускали через фильтровальную бумагу и подвергали центрифугированию в течение 15 мин. Установили, что САО ОГ, ТС и ТС с ОГ составляла 212,05; 65,35 и 699,43 мг/100 г соответственно. Сделан вывод, что введение ОГ в рецептуру ТС способствует повышению САО готового продукта и придает ему функциональные свойства.

English. A possibility of increasing the total antioxidant activity of cottage cheese by introducing buckwheat bran in the amount of 15% of the weight of cottage cheese into its formulation was investigated. Buckwheat bran was obtained from the seeds of thermally untreated buckwheat from which the shell (husk) was removed. The antioxidant activity was determined by coulometric titration in galvanostatic mode according to the certified method on a coulometric analyzer "Expert-006-antioxidants" manufactured in the Russian Federation. Samples of buckwheat bran, cottage cheese and cottage cheese with buckwheat bran were filled with distilled water in equal proportions for 30 min. The swollen samples were ground in a mortar to a homogeneous consistency and then homogenized. The homogenized mixture was passed through filter paper twice and centrifuged for 15 min. It has been established that the total antioxidant activity of buckwheat bran, cottage cheese and cottage cheese with buckwheat bran was 212.05; 65.35 and 699.43 mg/100 g, respectively. It has been concluded that the introduction of buckwheat bran into the cottage cheese formulation contributes to an increase in the total antioxidant activity of the finished product and gives it functional properties.
