The effect of glycine in the modified nutrient medium on the dynamics of antioxidant activity of biomass | Влияние глицина в составе модифицированной питательной среды на динамику антиоксидантной активности биомассы

English. Probiotic microorganisms living in fermented dairy products are potential sources of bioantioxidants that realize their activity in the human microbiome. A promising method for increasing the antioxidant activity of microorganisms that are part of starter cultures for dairy products is the selection of optimal culture conditions using modified nutrient media containing growth factors affecting the level of antioxidant response. The amino acid glycine takes an active part in the synthesis of a wide range of compounds, which cause the total antioxidant activity of a cell. The results of studies of the effect of glycine percentage on the growth rate of an associated microorganism consortium (containing Lactobacillus lactis, Lb. bulgaricus, Lb. plantarum, Saccharomyces lactis) growing on a modified nutrient medium, the dynamics of its antioxidant activity and the level of glutathione are presented. The catalytic effect of glycine in concentrations from 0.8 to 1.5 g/100 g on the bacterial culture growth rate is revealed. An increase in the antioxidant activity of the inoculate on the nutrient medium by 52.5% in a sample with a glycine concentration of 1.5 g/100 g is found as well, the level of glutathione in the nutrient medium containing cell mass was of 92.41±1.98 mg%.

Russian. Пробиотические микроорганизмы кисломолочных продуктов являются потенциальными источниками биоантиоксидантов, реализующие свою активность в микробиоме человека. Перспективным методом повышения антиоксидантной активности микроорганизмов, входящих в состав заквасок для молочных продуктов, является подбор оптимальных условий культивирования на модифицированных питательных средах с ростовыми факторами, влияющими на уровень антиоксидантного ответа. Аминокислота глицин принимает активное участие в синтезе ряда соединений, обусловливающих суммарную антиоксидантную активность клетки. Представлены результаты исследований влияния дозы глицина на рост биомассы ассоциированного консорциума микроорганизмов (Lactobacillus lactis, Lb. bulgaricus, Lb. plantarum, Saccharomyces lactis) на модифицированной питательной среде, динамику ее антиоксидантной активности и уровень глутатиона. Установлено каталитическое влияние глицина на рост биомассы в концентрации от 0,8 до 1,5 г/100 г и повышение антиоксидантной активности инокулята на питательной среде на 52,5% в образце с концентрацией глицина 1,5 г/100 г, уровень глутатиона в питательной среде с биомассой при этом составил 92,41±1,98 мг%.
