The use of E. cristatum mycelial fungus to improve the quality and functionality of tea | Использование мицелиального гриба E. cristatum для улучшения качества и повышения функциональности чая

Постферментированный чай Фужуань, обладающий антидиабетическими, жиросжигающими, гепатопротекторными и антиоксидантными свойствами можно рассматривать как перспективное сырье для функциональных напитков. Изучали влияние культивирования мицелиального гриба Eurotium cristatum на органолептические и физико-химические свойства чая. Культура гриба, развиваясь на растительном сырье, в зависимости от фазы роста либо активно потребляет компоненты сырья, переводя их в растворимую форму за счет действия гидролитических ферментов, либо увеличивает количество биомассы, обогащая продукт своими метаболитами. Поэтому, изучение динамики изменения физико-химических показателей чая при культивировании мицелиального гриба может позволить выбрать длительность ферментации для получения продукта с заданными свойствами. В качестве объектов исследования использовали вьетнамский черный чай компании Май марки BPS и мицелиальный гриб E. cristatum, с помощью которого ферментировали чай. Для оценки изменения качественных показателей в процессе ферментации пробы чая отбирали каждые 48 ч, высушивали в мягких условиях, определяли выход экстракта и органолептические показатели. Полученные результаты показали, что микробная постферментация оказывает значительное влияние на выход экстрактивных веществ, причем изменение коррелирует со стадией развития микробной культуры. Также установлено, что в ходе ферментации увеличивается количество янтарной и уксусной кислот, исчезают древесные ноты во вкусе и аромате, чай приобретает органолептические характеристики, приближенные к чаю Пуэр Шу. За счет варьирования продолжительности ферментации в интервале от 48 до 336 ч можно получать чай, обладающий заданными органолептическими свойствами.

Post-fermented Fuzhuan tea, which has antidiabetic, fat-burning, hepatoprotective and antioxidant properties is one of the promising types of raw materials appropriate for functional beverage production. The aim of this work was to study the effect of cultivation of the mycelial fungus Eurotium cristatum on the organoleptic and physico-chemical properties of tea. Mushroom culture that develops on plant raw materials, in different growth phase, either actively consumes raw material components, converting them into a soluble form due to the action of hydrolytic enzymes, or increases biomass amount, enriching the product with its metabolites. Therefore, the study of changes in the physico-chemical parameters of tea during the cultivation of mycelial fungus can allow us to choose the fermentation duration to obtain a product with the desired properties. The Vietnamese black tea produced by the Mai company, of the BPS brand was used as the study object, and mycelial fungus E. cristatum was used for tea fermentation. To assess changes in quality indicators during fermentation, tea samples were taken every 48 hours, dried under mild conditions, and then the extract yield and organoleptic parameters were determined. The obtained results showed that microbial post-fermentation has a significant effect on the yield of extractive substances, and the change correlates with the stage of microbial culture development. It was also found that during fermentation, the amount of succinic and acetic acids increases, woody notes in taste and aroma disappear, tea acquires organoleptic characteristics close to Puer Shu tea. By the way of fermentation duration varying in the range from 48 to 336 hours, it is possible to obtain tea with desired organoleptic properties.
