[Chemical composition of various tissues in the meat of Prelux-Bro broilers]

Chemical analysis of the meat tissue in legs, drumsticks and breasts in male and female hybrid "Prelix-Bro" chickens showed the following: the water content was significantly higher in the leg tissue compared to the drumstick and breast tissues regardless of sex; significant differences were found with the ash content but only in male chickens and that, between breasts on the one hand and legs and drumsticks on the other; the highest content of the total proteins in muscle tissue in both sexes was in breasts, whereas there were significantly more proteins in legs than in drumsticks; the total fat was mostly found in the muscle tissue of drumsticks; the fat content was significantly higher in the breast muscle of female chickens than in male chickens.
