Optimization of propagation medium for bakers' yeast using date extract and molasses 1- Determination of the optimum concentration of the macroelements

A local strain of Saccharomyces cerevisiae, capable of growing on a medium containing date extract or molasses as the sole carbon source is described. The study deals with the effect of macroelements on bakers' yeast production using date extract. The optimium concentration of ammonium sulphate was found to be 0.4-0.5 g/100ml. The addition of ammonium dihydrogen phosphate to the level of 0.125 g/100ml slightly increased the dry weight to 0.5 g/100ml. The results show that bakers' yeast can tolerate a wide range of potassium chloride, while the concentration of magnesium sulphate was critical. It was also observed that calcium chloride is not essential for propagation of bakers' yeast. The data obtained in this study revealed that the propagation and the activity of bakers' yeast growing on the molasses were low compared to date extract. The results indicated that the date extract holds a good promise as a source of carbon for bakers' yeast production
