Biochemical investigations on carotenoid, vitamin C and certain mineral content in Crataegus coccinoides fruit

The ripe of Crataeus coccinoides Ashe has high and varied content of bicyclic carotenoids, of alpha and beta-iononic carotenoids, of alpha and beta-iononic structures. A characteristic is the high number of epoxide carotenoids (violaxanthin, auroxanthin, flavoxanthin, beta-carotene-5, 6, 5', 6'-di-epoxide) out of which violaxanthin is the main pigment. Out of hydrocarbon carotenoids only alpha and beta-carotene have been identified and out of xanthophills Opcryptoxanthin, lutein, and zeaxanthin. Lutein, beta-carotene and violaxanthin contents are higher, i.e., between 12 and 42 % while the other are lower (i.e., 0.5 % of the total carotenoids. Total ratio of lutein to beta-caratene content is below unit. In ripe fruit, besides carotenoids, flavonoids and anthocyans were also found. Vitamin C content in fresh ripe fruit is 5,2 mg/100g, not different from that of apples, pears, carrots, etc. Contents in the minerals investigated: nitrogen 2.85 %, phosphorus 0,27 %; potassium 0,135 %; calcium 0,10 %, magnesium 0,08 % and natrium 0,03 % SU
