This book on new vegetable species is a synthesis of literature studies, research and experiments iniated by the CTIFL in the seventies, in order to meet the increasing demand for vegetables other than those traditionally grown in France and in Europe. In the present case, "new species" doesn't mean newly created plants, but unknown or little known to the market, or no longer in use. Contents: - a (non-exhaustive) list of 709 alphabetically listed species, identified by botanists as being or having been consumed as vegetables throught the ages in various parts of the world. This list comprises: the botanical name of the alphabetically listed species, the French name, the family, the consumed part(s) - an index of common names, botanical synonyms or particular subdivisions used by some authors - a sometimes short, sometimes extensive description of the 709 species, classified according to the consumed parts: roots, bulbs, stems or sprouts, flowers, fruits, seeds. Within each group, the vegetables are alphabetically listed according to family and within each family, they are classified according to genus and species. Large scale products such as artichoke, asparagus, carrot, cabbage, tomato, etc. are mentioned but their cultural requirements and growing techniques have been left out, because those aspects are generally known or can easily be found in other books, which is not the for the case for the "new species". Finally, as far as possible, the names of vegetables used in most CEE countries are listed.
