[Utilization of sea urchin as protein foodstuffs]

One of the marine resources that can be raised as raw material for food industry is sea urchin. In order to complete people requirements of high potential foodstuffs, diversification of food products made from sea urchin must be realized in development efforts of food industry. Several known type of sea urchin in Indonesia are Diadema setosum (LESKE); Echinometra methei (DE BLAINVILLE); Tripneustes grattilla (LINNAEUS); Echinotrix sp., Slamacis sp. Various processed products that can be made from sea urchin are soysauce and concentrated protein. Stages of soysauce processing are washing urchin egg, sea salting and fermenting and steaming of irqurd that forms after fermentation. The longer the steaming, the thicker the soysauce formed and the higher its protein content.
