English. The evolution of chlorophyll a and b, and total carotenoid levels were studied during ripening of grape berries of different cultivars of vinification grape (white and red grapes). The content of these pigments decreases continuously during ripening. We have found considerable levels of photosyntetic pigments in skin of grape in industrial maturation. Climatic conditions have a great influence in the levels and the evolution of these pigments
