[Applications and developments of the rheology of food systems]

[The applications of rheology were addressed particularly to the control of the consistency of the final product, while the analysis of the rheologic behaviour of the materials during processing and the correlation of rheologic properties with composition have not received the same attention in the food sector. To develop and improve the research on all these matters, a methodical extension of rheometric surveys of fundamental type, carried out on controlled flow and deformation fields and therefore translatable in terms of fundamental rheologic values, so as to make, together with empirical and sensory tests, an ideal picture provided with correlated information, is necessary. The present and still potential applications of rheology to the food sector are examined in connection with experimental processes and their results, through the mere correlation of data or the rheologic modeling]

Le applicazioni della reologia sono state rivolte principalmente al controllo della consistenza del prodotto finale, mentre l'analisi del comportamento reologico dei materiali in condizioni di processo e la correlazione delle proprieta' reologiche con la composizione non hanno ricevuto nel settore alimentare altrettanta attenzione. Per sviluppare e migliorare la ricerca su tutte queste tematiche e' necessaria un'estensione sistematica delle indagini reometriche di tipo fondamentale, condotte in campi di flusso e di deformazione controllati e quindi traducibili in termini di grandezze reologiche fondamentali, in modo da comporre, con esse e con i test empirici e sensoriali, un quadro ideale completo di informazioni tra loro correlate. Le applicazioni attuali e quelle ancora potenziali della reologia al settore alimentare sono esaminate in stretta connessione con i procedimenti sperimentali e i risultati che si possono ottenere da questi, attraverso la semplice correlazione dei dati e la modellizzazione reologica
