English. [A series of industrial trials of tangential microfiltering of white and red wines have been carried out. The used devices consist of Polisulfone hollow fibre membranes with a porosity inferior to 0.2 and with a surface of 50-100 m2. During trials, the efficacy of the devices on the retention of enzymes, microorganisms and of the components influencing turbidity have been analyzed. The rheologic and organoleptic characteristics of the different microfiltered wines have been also estimated. A wide and detailed analytic survey has shown that the used membranes do not negatively influence the characteristics and the quality of red and white wines]

Le attrezzature utilizzate sono costituite da membrane a fibre cave in polisulfone con porosita inferiore a 0.2 e con superficie da 50 a 100 m2. Nel corso delle prove si sono analizzate le prestazioni delle attrezzature sulla ritenzione degli enzimi, dei microorganismi ed in generale dei componenti influenzati la torbidita. Si sono inoltre valutate le caratteristiche reologiche e organolettiche dei diversi vini microfiltrati.una vasta e dettagliata indagine analitica ha dimostrato che le membraneutilizzate non influiscono negativamente sulle caratteristiche e la qualita dei vini bianchi e rossi
