English. The results concerning 49 Italian cultivars grown in the years 1987-1991 in 17 locations are here reported. The most important reference tests are: test weight, protein content, Zelany index, Chopin alveograph, Brabender farinograph and baking test. The cultivars have been classified in four qualitative classes
