Colour of rose wines

English. Rose' wines now meet the taste of an increasing number of people, but their chromatic characteristics appear to be quite differently appreciated. This variety of responses seems due, at least partially, to the difficulty of finding out an optimum colour for this kind of wines. The present investigation is based on 33 rose' wine samples of different origin and it aims at evaluating the physical parameters best suited to foretell the visual evaluation by groups of customer. The results allow to conclude that CIELAB parameters are the most suitable from this point of view. It was further ascertained that the response behaviour of tasters may be correlated with instrumental factors according to non-linear relationships which differ from one to another taster. This obviously makes difficult the solution of our problem

Italian. I vini rosati sono preferiti da un numero crescente di consumatori, ma le loro caratteristiche cromatiche appaiono molto differenziate. Questa variabilita' sembra dovuta, almeno in parte, alla difficolta' di individuare il colore ottimale per questa categoria di vini. Con la presente indagine, condotta su 33 rosati di varia provenienza, si e' cercato di valutare quali parametri fisici permettessero di meglio prevedere la valutazione visiva di un gruppo di consumatori. I risultati indicano che i parametri CIELAB sono i piu' oppportuni da questo punto di vista. Si e' poi accertato che il giudizio di gradevolezza espresso dagli assaggiatori e' correlato ai valori non strumentali secondo relazioni non lineari e variabili da un individuo all'altro. Cio' rende notevolmente difficile la soluzione di tale problema
