Carcass and meat qualitative characteristics of Podolic, Buffalo, Friesian and Romagnoli young bulls fed with two different nutritive levels

English. This work shows the chance of improving through diet meat qualitative and quantitative production on animals whose aptitude is not to produce meat. The following are considered: Podolica (Po) for rough breeds, introduction of Buffalo (Bu), looking at the future availability of males due to the expansion of this species. As to comparison, Romagnola (RM) for meat breeds and Italian Friesian (ITF) for the milk ones are used. 48 animals, divided into 2 classes, were used: one with feeding for late animals (meat breed; 3 groups: RM, Po1, Bu1), the other with feeding for precocius animals (milk breeds; 3 groups: ITF, Po2, Bu2). The ways of side conservations and following integral anatomical dissection are those suggested by ASPA rules. The following were studied: a) on carcass side, fore-hind quarter and anatomical region percentage and composition in tissues (meat, bone, fat); b) on meat, colorimetric parameters (L*, a*, b*, C, H), pH 24 hours, water losses by double weighing, tissurometric and rheologic characteristics. It is found that Bu and Po can be used as meat animals, particularly Po fed meat animal diet has more bright and less tender meat and Bu, even showing a brighter and more saturated meat, with lower values of shear stress and chewingness, has a high fat deposition which reduces meat

Italian. Il presente lavoro esamina la possibilita' di migliorare attraverso l'alimentazione la produzione di carne, in quantita' e qualita', in animali non specializzati. Sono state prese in considerazione: la podolica (Po) per razze rustiche ed e' stata introdotta anche la specie Bufalina (Bu) in previsione della futura disponibilita' di maschi da macello in seguito all'espansione dell'allevamento. Sono state impiegate come confronto la razza Romagnola (RM) per le razze da carne, la Frisona italiana (ITF) per quelle da latte. Sono stati usati 48 animali suddivisi in due categorie: una con l'alimentazione adatta ad animali tardivi (da carne; 3 gruppi: RM. Po1, Bu1) e l'altra con alimentazione tipica da animali precoci (da latte; 3 gruppi: ITF, Po2, Bu2). Le modalita' della conservazione della mezzena e della successiva dissezione anatomica integrale sono state quelle consigliate dalle norme ASPA
