Effect of washing treatment on the quality of Nemipterus tolu fishballs

The quality of fishballs made from unwashed and washed threadfin bream (Nemipterus tolu) minces was compared using instrumental and sensory methods. Fishballs made from unwashed and once-washed minces were less elastic and less firm, compared to fishballs made from mince washed 2 or 3 times. No significant differences (p0.05) were observed in wateriness, toughness or succulence. The colour of fishballs made from twice and thrice washed minces was significantly whiter than for fishballs made from unwashed and once washed minces. No significant differences (p0.05) were observed for fishballs made from minces washed 2 or 3 times for all parameters measured
