Carcass quality and meat properties of young bulls in three of our breeds

Carcass and meat properties of young Simmental, Brown and Black/White bulls were studied in the research. The results showed that Simmental bulls deviated positively, while Black/White negatively from Brown bulls in most of carcass properties. Breeds were arranged in the same order in muscle fibre number, while there were no significant differences between breeds in fibre diameter. The differences between breeds in chemical analysis were relatively small. There was a positive deviation of Black/White breed in sensorial properties (tenderness, flavour, juiciness) which can not be completely explained yet
