The volatile fraction of samples of commercial strained tomatoes was investigated in order to deepen knowledge about the substances that contribute most to the typical flavour of this product. By principal component analysis the substances were selected which could describe the onset and/or the disappearance of some typical descriptors. Quantitative descriptive analysis (QDA) was then used for qualitative comparison of the samples examined. Finally, odour unities were calculated and represented graphically for a great number of substances

E' stata studiata la frazione volatile del passato di pomodoro commerciale allo scopo di approfondire le conoscenze sulle sostanze che maggiormente contribuiscono alla formazione del tipico aroma di questo prodotto. Con l'analisi delle componenti principali sono state selezionate quelle sostanze in grado di descrivere l'insorgenza e/o la scomparsa di alcuni tipici descrittori sensoriali. La successiva analisi descrittiva quantitativa (QDA) e' stato lo strumento per il confronto qualitativo dei prodotti in esame.
