English. Twenty-eight high SO2 producing strains of Saccharomyces cerevisiae were isolated from sulfited musts. The strains were characterized for the production of SO2, acetaldeyde, acetic acid and higher alcohols in synthetic and complex media. A great variability in the formation of by-products was observed in the complex medium, with the exception of isoamyl alcohol. In this medium a direct correlation between acetaldehyde and SO2 produced was not always found. These strains could be useful for the production of low alcohol beers, which need an adequate SO2 content
Show more [+] Less [-]Italian. Da mosti solfitati sono stati isolati 28 ceppi di Saccharomyces cerevisiae producenti alte quantita' di SO2. Questi ceppi sono stati caratterizzati per la produzione di SO2, acetaldeide, acido acetico ed alcoli superiori in mezzo sintetico ed in mezzo complesso. Una grande variabilita' di produzione e' stata osservata in mezzo complesso, ad eccezione dell'acool isoamilico. In questo mezzo il rapporto acetaldeide/SO2 non e' risultato sempre correlato. Questi ceppi potrebbero essere utili nella produzione di birre a bassa gradazione alcolica, in cui un certo tenore di SO2 e' gradito
