The major wheat quality tests performed within South Australia are specific or test weight, grain moisture, grain hardness, wheat protein, milling quality, flour colour, flour protein and physical dough testing. Assessment of varieties includes end product testing. Wheat quality requirements of domestic and overseas markets can differ considerably e.g. hardness and protein content are specific to the end use. The prime use for South Australian wheat, because of its hard grained varieties, is the pan and flat bread markets. It is critical to keep protein levels up.
