Development and quality evaluation of soybean fortified Adun [Nigeria]

English. Adun is a popular Nigeria refreshment. Adun was prepared by mixing together warmed palm oil (15 cube cm) and maize flour (100 g) with table salt and ground red pepper added to taste. Fortified products of Adun were obtained by adding soybean flour at the levels of 10, 15, 20, 25 and 30% by weight respectively. Protein analysis of the fortified products shows that protein content increases from 8.4% in the control to 11.7, 13.2, 14.4, 15.5, and 16.8% respectively. The fortified products also possess increased mineral content. Taste panel assessment indicates that 10-25% soybean inclusion is acceptable, while a product with more than 30% soybean inclusion is not likely to be acceptable to the public

La bevanda e' stata preparata miscelando olio di palma riscaldato (15 cm cubi) a farina di mais (100 g) con sale da cucina e pepe rosso macinato per dare gusto. Prodotti fortificati si sono ottenuti aggiungendo ad Adun farina di soia in percentuali di 10, 15, 20, 25 e 30% rispettivamente. L'analisi delle proteine del prodotto fortificato indica che il contenuto proteico aumenta dall'8.4% del prodotto base all'11.7, 13.2, 14.4, 15.5 e 16.8% rispettivamente. Il prodotto fortificato presenta inoltre un incremento nel contenuto di minerali. Prove di panel test indicano che aggiunte dal 10 al 25% di soia sono accettabili mentre percentuali superiori al 30% danno alla bevanda un gusto non piu' accettabile da parte dei consumatori
