Influence of Botrytis cinerea on the composition of cv. Trebbiano romagnolo, Albana and Sangiovese grapes

English. Changes on the composition of Trebbiano romagnolo, Albana and Sangiovese grapes due to the presence of Botrytis cinerea are described. The data show that this pathogen induced a significant decrease in sugars, tartaric and malic acid content; this effect, however, is partially hidden by grapes dehydration. Citric acid, acetic acid, gluconic acid, galaturonic acid, glycerol and methanol contents increased significantly when the grapes were infected by the pathogen. It was also observed that the different cultivars did not show the same behaviour in the presence of B. cinerea

L'analisi statistica dei dati analitici ha evidenziato l'influenza del patogeno sul contenuto in zuccheri, acido tartarico e acido malico, il cui decremento e' in parte mascherato dalla disidratazione delle bacche, e sugli acidi citrico, acetico, gluconico e galatturonico, glicerina e metanolo, che aumentano significativamente. E' stato inoltre osservato come le cultivars oggetto di sperimentazione avessero un differente comportamento alla presenza del patogeno
