Antagonistic activity of proteinaceous and nonproteinaceous molecules produced by Lactobacillus spp.

Several strains of the genus Lactobacillus are able to produce bacteriocins or antimicrobial compounds with activity either narrow to the strains closely related to the producer organism or wide, inhibiting a different group of Gram positive or negative microorganisms. Recently considerable emphasis has been placed on the identification of these antimicrobial compounds and their biochemical properties, including spectrum of activity, production conditions, purification procedures and modes of action, in view of the use of these substances or of the producer organisms as protective cultures in food systems. The present review gives an outline about the antimicrobial compounds produced by lactic acid bacteria of the genus Lactobacillus. For each substance, the producer strain, the source, the spectrum of activity and the factors which are able to affect the antimicrobial properties are provided

Numerose specie di lattobacilli sono in grado di produrre batteriocine o sostanze antagoniste il cui spettro di attivita' puo' essere sia limitato a ceppi strettamente collegati all'organismo produttore, sia ampio, includendo diversi gruppi di microrganismi Gram positivi e negativi. Recentemente particolare enfasi e' stata posta all'identificazione di queste molecole ed alle loro proprieta' biochimiche, che includono lo spettro di attivita', le condizioni di produzione, le procedure di purificazione e le modalita' di azione, in vista di una possibile utilizzazione delle molecole o degli organismi produttori come colture protettive dei prodotti alimentari. La presente rassegna offre una panoramica sulle sostanze ad attivita' antagonista di natura proteica o non proteica prodotte dai batteri appartenenti al genere Lactobacillus. Di ciascuna sostanza vengono riportate la specie batterica produttrice, l'origine del ceppo, lo spettro di attivita' ed i fattori di grado di influenzarla
