Milk for consumption and EU directives

EU directives do not leave much freedom in the setting of standards to ensure safety of milk production for consumption. In addition to strict safety prescriptions to avoid cross-contamination there are minimal requirements of temperature and holding time for defined heat treatments which exclude also overprocessing. The total heat stress is strongly constrained by the presence of heat indicators (in pasteurised milk, for instance, there must be total inactivation of the native phosphatase but a measurable residual activity of native peroxydase). With regard to UHT milk, the directive 92/46/CEE indicates a single processing. Whereas in some countries it is strictly forbidden to repeat the heat treatment, in Switzerland we looked for a solution adapted to our domestic conditions and set an upper limit of 400 mg/l of the lactulose content
