Observation of selected elements in a model process of starch production from amaranth

The distribution of Cd, As, Hg, Pb, Cr, Ni, Cu, Zn, Fe into starch, protein and fibre from amaranth in model process of amaranth starch production (alcaline mode) was studied. Dependence of selected elements cumulation on the wetting time in alkaline solution was determined. It was shown that the mode of alkaline starch preparation is suitable for starch production from amaranth in view of contaminant content.
