The effects of pH at second defecator on cane juice clarification

English. This research was conducted to know the effects of the change of pH at second defecator in juice clarification process. It was done at different pH of second defecator. The qualities of cane juice (apparent purity) are between 75.76 to 78.78 and reducing sugar between 1.35 to 1.72 percent. The laboratory experiment at temperature reaction 75 deg. C, pH of defecator 8.75 and pH of sulfitation 7.20 showed that the apparent purity increased 2.04 point from 77.37 to 79.41 with very significant difference. This condition was then applied at sugar factory scale. After the second defecator pH changed from 9.10 to 8.78 the lime content of clear juice decreased from 1.583 ppm to 1.083 ppm (31.6 percent) while the brightness of clear juice increased from 95.5 ppm to 61.8 ppm, about 35.3 percent. The analysis results showed that there has a tendency that if reducing sugar level is high, the increase of alkaline (pH) would parallel with the increase of the lime content of clear juice

Indonesian. Penelitian ini dilakukan untuk mengetahui pengaruh perubahan pH nira pada tangki defekator II di stasiun pemurnian nira. Percobaan dilakukan pada pH pada defekator II yang berbeda-beda. Kualitas nira tebu yang digunakan adalah HK antara 75,76 sampai 78,78 dan gula reduksi antara 1,35 sampai 1,72 persen. Percobaan pada skala laboratorium pada suhu reaksi 75 derajat C, pH defekator II 8,75 dan pH sulfitasi 7,2 memperlihatkan hasil peningkatan HK sebesar 2,04 poin dari HK (77,37 menjadi 79,41) dan berbeda sangat nyata dibandingkan dengan pH defekator II 9,10. Kondisi ini diaplikasikan pada skala pabrik dengan proses kontinyu. Sesudah pH defekator berubah dari 9,10 menjadi 8,78 terjadi penurunan kadar kapur nira encer dari 1583 ppm menjadi 1083 ppm atau sebesar 31,6 persen, peningkatan kejernihan nira encer dari 95,5 ppm menjadi 61,8 ppm atau sebesar 35,3 persen.
