[Food decay (spoilage) and food infection (because of food contamination and toxicology) in Suriname]

English. As a consequence of the socio-economic problems in Suriname it is expected that many people will consume foodproducts of bad quality. It can be expected that foodproducts will be imported to Suriname which do not comply with international standards. It can also be expected that the personal hygiene of many foodhandlers will decrease, resulting in an increase of food intoxication and food infection. Research into the level of food decay and food infection in Suriname is a top priority. This will give Suriname the opportunity to produce food products with a good quality and create a better food technology for Suriname. The present review of the literature shows that in the last few years many food products were declared unfit for consumption by the government. Often this was the case with food products in warehouses of importers. It also demonstrates that the number of food infections increased over the last few years and that Salmonella is the dominant bacteria. Men are more sensitive than women for bacterial infections and the creoles are the most infected group

Dutch; Flemish. Vanwege de sociaal-economische problemen in Suriname is de kans groot dat vele mensen levensmiddelen zullen nuttigen die van mindere kwaliteit zijn. Ook is te verwachten dat levensmiddelen geimporteerd zullen worden die niet aan de standaardnormen voldoen. Tenslotte is te verwachten dat de persoonlijke hygiene van vele foodhandlers zal afnemen, met als gevolg dat er een toename van voedselvergiftigingen en voedselinfecties zal optreden. Onderzoek naar de mate van voedselbederf en voedselinfectie in Suriname is daarom een noodzaak. Dit zal de mogelijkheid scheppen om levensmiddelen te maken van betere kwaliteit en zal een betere voedingstechnologie voor Suriname gecreeerd worden. Uit het hier gepresenteerde literatuuronderzoek blijkt dat de afgelopen jaren veel levensmiddelen door het Bureau voor Openbare Gezondheidszorg (BOG) werden afgekeurd en al te vaak betrof het levensmiddelen uit magazijnen van importeurs. Er blijkt ook een toename te zijn van voedselinfecties, waarbij de meest dominerende bacterie Salmonella is. Mannen zijn gevoeliger dan vrouwen voor bacteriele infecties en creolen zijn de meest geinfecteerde groep
