English. Streptococcus thermophilus and Lactobacillus delbrueckii subsp. bulgaricus are thermophilic lactic acid bacteria of particular interest to the dairy industry. For the protosymbiotic relationship that exists between strains of these bacteria, they are largely used in association as starter cultures for the production of several fermented foods. Due to their commercial significance, many basic and applied researches have led to an increasing understanding of the essential characteristics and technological properties of strains belonging to these species. This review deals with some recent knowledge on taxonomy, metabolic and genetic characteristics of S. thermophilus and L. delbrueckii subsp. bulgaricus. The antagonistic activity and bacteriophage resistance of these species are also discussed

Streptococcus thermophilus e Lactobacillus delbrueckii subsp. bulgaricus sono due specie di batteri lattici termofili di particolare interesse per l'industria lattiero-casearia. Peculiari ceppi appartenenti a queste specie, per il definito rapporto di protosimbiosi che si instaura tra di loro, vengono frequentemente utilizzati in associazione come starters per la produzione di svariati alimenti fermentati. A causa della loro rilevanza economica, queste specie sono state oggetto di numerose ricerche qualificate che hanno consentito di approfondire le conoscenze sulle loro caratteristiche di base e le potenzialita' applicative. Nella presente rassegna vengono considerate alcune recenti acquisizioni scientifiche sulle caratteristiche tassonomiche, metaboliche e genetiche di S. thermophilus e L. delbrueckii subsp. bulgaricus.
