[Hen-cock and capon. The poultry sector from Aristotele to the theshold of 2000]

Although poultry-farming is a very ancient rural activity, described by Aristotle in the 4th century BC and later by Cicero, Pliny and Columella, it had a significant, technical development as recently as the first decades of the 20th century. In the 1950s poultry-farming became an important, competitive industry, no longer a complementary activity, to the breeding of farm-animal like cattle and pig. This work analyses egg hens, which, thanks to selection and modern breeding techniques, have increased their yearly production to 300 eggs and more each, as compared to our grandmothers' hens whose yearly production averaged 50 eggs. The real focus of this work is the production of meat-chicken and the capon, in particular. The castrated chicken or capon, as it has been called since the times of the ancient Romans, has always been a very refined, highly appreciated food and market demand for this white meat is increasing. The capon, once an exclusive product of few female farmers, has become an important source for the farming industry
Show more [+] Less [-]Italian. La pollicoltura nonostante sia antichissima come attivita' rurale, ne scrive Aristotele nel IV sec. A.C., seguito poi da Cicerone, Plinio e Columella, tuttavia ha avuto un progresso tecnico notevole solo a partire dai primi decenni del XX secolo. E' dagli anni '50 che la pollicoltura e' divenuta un'industria zootecnica importante e competitiva, non solo accessoria, agli allevamenti degli animali da reddito come i bovini ed i suini. In questo lavoro abbiamo preso in considerazione non solo l'allevamento delle galline ovaiole che, grazie alla selezione ed alle moderne tecniche di allevamento, sono passate alla produzione di 300 e piu'uova/capo all'anno rispetto alle 50/capo delle galline delle nostre nonne, ma soprattutto la produzione del pollo da carne, in particolare il cappone. Il pollo castrato o cappone, come viene chiamato fin dai tempi degli antichi romani, e' sempre stato un cibo assai ricercato ed apprezzato e le richieste di mercato per questo prodotto avicolo di qualita' vanno sempre piu' aumentando. Il cappone, da prodotto esclusivo di poche donne contadine, e' diventato un prodotto importante nell'industria agricola
