Pre-slaughter treatment of Black-and-White bulls and their slaughter value

The objective of the study was to examine the effects of 3 pre-slaughter treatments (Ketomix supplement, an intravenous glucose infusion and an electrolyte drink) on the meat quality of Black-and-White bulls. The provision of electrolyte solution before slaughter was found to be the most effective in reducing muscle pH. Both the glucose infusion and electrolyte offering resulted in an significantly higher muscle glycogen content compared to either the control or Ketomix treatments. The adding of Ketomix to the feed appeared insufficient to prevent antemortem stress which was evidenced by a high pH value and low glycogen content of meat from supplemented bulls
