In this paper the AA have reviewed and summarized the food additives which can be employed in fish products (considering the Italian law D.M. n. 209, 27 February 1996), in order to allow an easier search of the additives relevant to each fish product. Some inaccuracy and/or self-contradiction have also been outlined in view of an emendation of the text or a more detailed interpretation of the law

Lo scopo e' duplice: permettere la consultazione rapida degli additivi per ciascun tipo di prodotto ittico; segnalare e, ove possibile, richiamare l'attenzione degli esperti su alcuni dubbi interpretativi ed imprecisioni riscontrate nell'elaborazione di dette tabelle
