Preparation of freeze concentrate kiwifruit juice

English. As it is well known, kiwifruit derivatives very often show unsatisfactory quality: loss of green colour, very high acidity and loss of flavour. These characteristics come out from the peculiar sensitivity of kiwifruit to the processing and in particular to the heat treatments. The aim of the present research work was to propose the use of freeze concentration in order to produce a concentrate juice to be stored at frozen state and able to be ready to use by simple addition of water. Besides, the freeze concentrate kiwifruit juice could be used as half-manufactured product in yoghurt, ice cream, dessert and pastry preparation

Le difficolta' di trasformazione dei kiwifruit (Actinidia deliciosa) sono soprattutto legate all'elevata acidita' dei succo e all'estrema sensibilita' al calore delle componenti cromatiche, con viraggio dal verde al giallo e della frazione aromatica volatile. La tecnologia proposta in questo lavoro consiste nell'impiego della crioconcentrazione per la preparazione di un concentrato che puo' essere congelato e successivamente ricostituito per aggiunta di acqua, ottenendo una bevanda pronta al consumo.
