Shrinkage and density changes of carrot roots during convection drying

Volume shrinkage and density of carrot roots in the process of convection drying were studied. Linear relationship was found between drying shrinkage and the moisture content of carrot roots within the whole range of moisture content changes. Actual shrinkage of carrot roots was less than the theoretical shrinkage calculated according to given equation. In the process of carrot root convection drying the change of moisture content from 87 to 0% was accompanied by a curvilinear decrease of material density from 960 to 709 kg/cubic m
