Paper presented several new possibilities of using the results of stress relaxation test in plant materials of the high moisture content. On the basis of different experiments conducted on carrot roots a possibility was found to describe properly their "physical condition" with the use of compression test (by 8%) and measuring the water potential as well. Much higher susceptibility of carrot roots to shearing stress than to compressive stress was observed. A quantitative method to estimating the range of irreversible phenomena during stress relaxation test was indicated
