Prospects for creating a market for lamb meat

A total of 136 ram-lambs of different genotypes - Blackheaded, Polish Merino and Wrzosowka - were used in the experiment. Lambs of both sexes were fattened intensively and semi-intensively in the case of Blackheaded lambs and intensively, semi-intensively and extensively in the case of Wrzosowka lambs. The above groups of sheep were slaughtered. The results obtained led us to conclude that type of feeding influenced slaughter yield, percent proportion of meat and fat in half-carcass, the proportion of valuable cuts and their tissue composition within each breed and sex. Among slaughter traits, percent proportion of meat and fat in carcass was observed to show the greatest variation. The possibility of using live ultrasonic measurements for muscle and fat content evaluation was also found.
