Investigation of the tuber quality of potato clones for French fry and fresh market use [Solanum tuberosum L.]

The results of a two-year research (1998-1999) with the aims to evaluate some quality parameters to use in a potato breeding programme for the selection of advanced material adapted to double use (fresh market and French fry) are reported. Some attributes were measured for a number of cultivars and breeding lines: two shape indices for the length (I1) and flatness (If). The length index showed high correlation with the shape attribution performed by a group of experts [R*[2) = 0,8447]. In Emilia-Romagna environment the best I1 for double utilization is 1,5 (oval-long shape) and for only French fry is 1,7 (long shape). For maximum quality expression the If will be near to 1,0. The evaluation of fry colour during storage at + 3-4 deg C is a good character for the selection of advanced genotypes with tolerance against cold sweetening. The CRPV clones 1305L46 and 1373O4 showed low variation of fry colour in comparison with fresh market cultivars Primura and Monalisa. In a breeding programme for the selection of advanced materials for fresh market and French fry use, it is possible to use several parameters: shape, volume, dry matter, fry colour, after cooking blackening and the sensory evaluation. The human sensory analysis employed here was effective in establishing sensory profiles of crispness and typical potato taste
