Characterization of a typical product of Piedmont. The Focaccia Novese [Piedmont]

English. Flat bread is a bakery product available throughout the Country with different texture, chemical, and sensory characteristics for each region. An important and very well known Italian flat bread is certainly the one produced in the Novi Ligure area (Piedmont, North West Italy). Its production technology is characterised by double rising, a rolled dough and a "denting" to obtain the small alveolus that hold the extra virgin olive oil brushed on the flat bread surface once the bread is baked. In this study, 10 samples of Focaccia Novese flat bread and 4 samples of flat bread produced in other areas were examined. The Focaccia Novese shows a higher fat content than the other flat breads; the odour and aroma of oil and the salty taste too are very different. These differences clearly distinguish the Focaccia Novese from the other existing flat breads on the market, so fully qualifying it for a possible attribution of the Protected Geographical Indication

Italian. La focaccia e' il prodotto da forno maggiormente diffuso in Italia, con caratteristiche strutturali, compositive e sensoriali tipiche per ogni area. Una delle focacce italiane piu' interessanti e' certamente quella prodotta in Piemonte nella zona di Novi Ligure (AL). La sua tecnologia di produzione e' molto particolare, poiche' prevede una doppia lievitazione, una "stiratura" della pasta ed una successiva "bucatura" al fine di ottenere dei piccoli alveoli che trattengono meglio l'olio, rigorosamente extra vergine di oliva, che viene pennellato sulla lamella al termine della cottura. In questo studio sono stati esaminati dieci campioni di Focaccia Novese e quattro campioni di focaccia provenienti da altre aree del Piemonte. La Focaccia Novese e' caratterizzata da un contenuto in grassi superiore a quello delle altre focacce piemontesi e da una minore umidita'. Anche l'aroma di olio ed il sapore salato sono molto diversi fra i due tipi di focacce. Queste caratteristiche consentono di differenziare chiaramente la Focaccia Novese dalle altre focacce piemontesi e giustificano pienamente una futura attribuzione della Indicazione Geografica Protetta
