German. Wafer manufacturing is a very specific end-use of flours. In industrial wafer production all the technical improvements to increase efficiency as bigger baking plate size or more plates per minute put additional pressure to flour suppliers to deliver a "better" flour of more stable baking performance. Traditionally for wafer flours some criteria as e.g. a moderate protein content are well known. The methods for determining the gluten development risk and wafer batter viscosity are implemented in a new rapid flour analyzer which will provide up to eight flour parameters within a 1 minute measuring time. That expert system is presently tested in industrial environment and will be available soon.
