The composition of fatty acids and cholesterol content in the milk of small ruminants

The profile of individual fatty acids and cholesterol were specified in the milk of the ewes from the synthetic milk line and White-breed graded goats and hybrid goats of the White graded breed and the Boer breed. On the basis of the obtained results it was found that the percentage of saturated fatty acids in the milk of hybrid goats is much lower than in the milk of White-breed graded goats and ewe milk. Simultaneously, the percentage of unsaturated fatty acids remains at a higher level in goat milk rather than ewe milk. It was found that in ewe milk the amount of contained cholesterol is twice as big as in goat milk
