Estimation of the pectin content in feeds and foods. Fractional extraction and quantitative determination

English. The purpose of this experiment was to characterize the soluble constituents of the dietary fibre in feeds and foods. Determination of total pectins (TP), their fractions (HM, high metoxyl pectins; LM, low metoxyl pectins; protopectin) and soluble dietary fibre (SDF) was carried out on 24 samples of different classes of feeds and foods. The highest TP values were found in alfalfa hay and dry beet pulp (3.74 and 4.98% DM respectively) among the animal feeds; in many vegetables and fruits for human, TP was on average 3.40 +- 0.05% DM. The distribution of the pectin fractions was homogeneous in some classes of feeds (cereals and cereal products, fibrous feeds). In contrast, the proportions of HM, LM and protopectin fractions on TP increased in legumes, tubers and vegetables; opposite pattern was found in fruits. On average, the TP content was about 39.4% of SDF. Excluding vegetables and fruits, the correlation between SDF and TP was high (r*[2) = 0.94)
Show more [+] Less [-]Italian. [Lo scopo di questo esperimento era la caratterizzazione dei costituenti solubili della fibra della dieta in alimenti per gli animali e per l'uomo. Su 24 campioni di categorie diverse di alimenti e' stata effettuata la determinazione delle pectine totali (TP), delle loro frazioni (HM, altamente metilate; LM, a basso grado di metilazione; protopectine) e della fibra solubile della dieta. Fra gli alimenti per gli animali, i valori piu' alti di TP sono stati trovati nel fieno di erba medica e nelle polpe essiccate di bietola (3,74 e 4,98% sulla SS rispettivamente); in molti ortaggi e frutti per l'alimentazione umana, TP era in media pari a 3,40 +- 0,05% sulla SS. La distribuzione delle frazioni delle pectine e' risultata omogenea in alcune classi di alimenti (cereali e prodotti a base di cereali, alimenti fibrosi). Al contrario, le percentuali di HM, LM e protopectine rispetto alle TP aumentavano nei legumi, nei tuberi e negli ortaggi; una situazione opposta era riscontrabile nei frutti. In media, il contenuto di TP e' risultato pari a circa il 39,4% della SDF. Con l'esclusione dei cereali e dei frutti, la correlazione fra SDF e TP e' risultata alta [r*[2) = 0,94]]
