Survey of ochratoxin A in musts - concentrated musts and wines produced or marketed in Trentino (Italy)

English. Forty juices and 94 DOC wines, obtained with different agronomic and winemaking practices, produced from Trentino grapes, were analysed for their content of ochratoxin A (OTA). Only 2 samples of white and 8 of red wine had measurable amount of OTA, ranging between 0.01 and 0.1 microng/l. Higher OTA levels were detected in the 17 concentrated musts available on the Trentino market in 1999 and 2000. The allowed enrichment accounts for the low amounts measured in some Trentino DOC wines

Quaranta mosti e 94 vini DOC ottenuti con differenti pratiche agronomiche ed enologiche, prodotti da uve del Trentino, sono stati analizzati per il loro contenuto di ocratossina A. Solamente 2 campioni di vino bianco e 8 di vino rosso avevano tenori di ocratossina A misurabili, tra 0,01 e 0,1 microng/l. Piu' elevati contenuti di ocratossina sono stati riscontrati in tutti i 17 mosti concentrati reperiti sul mercato trentino tra il 1999 e il 2000. I livelli di arricchimento autorizzato giustificano i limitati tenori di ocratossina misurati in qualche campione di vino Trentino DOC
