Wood utilization in colour stabilization of red wines. Compositive and technological aspects

The use of wood in the aging of wines has a twofold aim of supplying flavour and non-volatile compounds, such as the polysaccharides and polyphenols that, together with a slow oxygenation process, contribute towards stabilizing the colour and making the wine more palatable. Oak is an ideal wood because of its porosity and the characteristics of the released compounds. Wood seasoning and other technological treatments, particularly toasting, strongly affect the typology and release kinetics of the different compounds. Nowadays, there are many different commercial preparations that allow the high costs of the casks and long duration of the aging period to be avoided. Oak wood chips should be included among these practices. All these topics are extensively treated in this review

L'impiego del legno nell'affinamento dei vini ha il duplice scopo di cedere sostanze volatili e non, come polisaccaridi e polifenoli, che, assieme a un lento processo di ossidazione, contribuiscono alla stabilizzazione del vino, rendendolo piu' morbido in bocca. Il legno di quercia appare ideale per tali scopi, presentando buona porosita' e ricchezza di composti. La stagionatura e altri trattamenti tecnologici, in particolare la tostatura, influiscono grandemente sulla tipologia e sulle cinetiche di rilascio di diversi composti. Oggi sono disponibili diversi preparati commerciali che consentono una riduzione dei costi elevati dei contenitori di legno e della lunga durata dell'affinamento.
