Microbiological quality of minced beef from butcher shops and supermarkets [Greece]

English. The microbiological quality of 230 samples of minced beef obtained from butcher shops and supermarkets in eight areas of Athens was examined. The aerobic plate count (APC), the number of Enterobacteriaceae, Brochothrix thermosphacta and Pseudomonas spp. were determined. Average APC log sub (10) ranged from 6.20 to 6.84, while, for Enterobacteriaceae, B. thermosphacta and Pseudomonas spp., the counts ranged from 3.15 to 4.50, 4.82 to 6.33 and 4.98 to 6.13 cfu g*[-l), respectively. The influence of geographical area, type of shop and month in which the samples were purchased was investigated. The area of purchase significantly influenced (P0.001) the counts of Enterobacteriaceae and B. thermosphacta, but not the counts of Pseudomonas spp. (P
Show more [+] Less [-]Italian. E' stata valutata la qualita' microbiologica di 230 campioni di carne tritata prelevata nelle macellerie e nei supermercati di otto quartieri di Atene. Sono stati determinati la conta microbica aerobica (APC) e il numero di Enterobacteriaceae, Brochothrix thermosphacta e Pseudomonas spp. I valori logaritmici di ACP erano compresi tra 6,20 e 6,84, mentre la conta per Enterobacteriaceae, Brochothrix thermosphacta e Pseudomonas spp. era compresa, rispettivamente, tra 3,15 e 4,50, 4,82 e 6,33 e 4,98 e 6,13 ufc g*[-l). E' stata inoltre valutata l'influenza del quartiere cittadino, del negozio e del mese di prelievo. E' stato verificato che la conta di Enterobacteriaceae e di Brochothrix thermosphacta era influenzata significativamente (P0,001) dal quartiere di prelievo.
