The development of genomics tools is a considerable technological progress that allows the simultaneous analysis of thousands of genes (SNP chips), transcripts (transcriptomics) and proteins (proteomics). Using these technologies allows the measurement of complex phenotypes such as traits related to product quality. The objective of this review is to present the various studies conducted the last years in various meat industry to identify biomarkers of meat quality. The text is based on the strate gy developed by each sector in terms of meat quality.
