The article presents the results of research on changes in the size of physicochemical parameters and microbiological contamination of thick juice during its storage in reservoirs.The tests included determination of apparent content of dry substance, apparent sucrose content, invert, pH, color, conductometric ash and calcium salts as well as microbiological analyzes including determination of the number of mesophilic bacteria, mold, yeast, and bacteria producing mucous substances. Physicochemical analyzes of stored dense juice did not show any significant changes. The juice was stable and not degraded. Microbiological analysis of dense juice also showed no change in the degree of microbial contamination.
