Wasteless separation of whole-wheat triticale flour with high carotenoid content into starch and protein fractions | Безотходное разделение цельномолотой муки тритикале с высоким содержанием каротиноидов на крахмальную и белковую фракции

The purpose of air flour classification is to increase the starch content in the heavy fraction and the protein content in the light fraction and to enrich them for effective use in food production. Triticale grain of carotenoid varieties 'Ramsay' and 'Saur' from the collection of the Federal Rostov Agricultural Research Center was used as the material for the studies. Studies of the process were carried out on the unit PDU-380 developed in the All-Russian Research Institute of Starch Products for flour milling and air classification. To assess the efficiency of milling and air classification of whole-meal flour from triticale grain a method for determining the yield of the light fraction and its protein content from the proportion of the heavy fraction and mass fraction of protein in it is proposed. As a result of studying the air classification process of flour from whole-wheat triticale grain it has been found that the relative content of carotenoids in the heavy and light fractions significantly differs from the content in the original flour. 'Ramsay' has 402 in the heavy fraction and 610 mcg/g dry matter in the light fraction; 'Saur' has 302 and 405 mcg/g dry matter, respectively. The ash content in the light fraction of both varieties was below 2%. The falling number of the heavy flour fraction of both varieties was 300 s in contrast to the light fraction of about 250 s; as to water absorption capacity the heavy fractions of triticale flour of both varieties had an increased water content of 60%, and the light flour fraction of 'Saur' decreased to 45%. The research results showed a possibility of obtaining whole-meal flour by an impact method from triticale grain by "the compressed technology", and its separation by air classification into starch and protein fractions enriched in carotenoids, having a protein content of up to 20%, meeting the requirements of bakery production. A starchy fraction with a starch content of up to 20% and ash of more than 2% is advisable to use in cardboard and paper production. The proposed approach to grain processing also reduces the degree of environmental impact of this process.

Целью пневмоклассификации муки является повышение содержания крахмала в тяжелой фракции и содержания белков в легкой фракции и обогащение их для эффективного использования в производстве пищевых продуктов. В качестве материала для исследований использовалось зерно тритикале каротиноидных сортов Рамзай и Саур из коллекции ФГБНУ "Федеральный Ростовский аграрный научный центр". Исследования проводились на установке ПДУ-380, разработанной во ВНИИ крахмалопродуктов для измельчения и пневмоклассификации муки. Для оценки эффективности измельчения и пневмоклассификации цельносмолотой муки из зерна тритикале предложен метод определения выхода легкой фракции и содержания в ней белка от доли тяжелой фракции и массовой доли в ней белка. В результате изучения процесса пневмоклассификации муки из цельномолотого зерна тритикале установлено, что относительное содержание каротиноидов в тяжелой и легкой фракциях значительно отличается от их содержания в исходной муке. У сорта Рамзай в тяжелой фракции содержание 402, а в легкой 610 мкг/г СВ, у сорта Саур соответственно 302 и 405 мкг/г СВ. Содержание золы в легкой фракции у обоих сортов ниже 2%; число падения тяжелой фракции муки обоих сортов – 300 с, в отличие от легкой – около 250 с; по водопоглотительной способности тяжелые фракции тритикалевой муки обоих сортов имели повышенное содержание воды – до 60%, а легкая фракция муки из сорта Саур пониженное – до 45%. Результаты исследований показали возможность получения цельносмолотой муки из зерна тритикале ударным способом по "сжатой технологии" и разделения ее пневмоклассификацией на крахмалистую и белковую фракции, обогащенные каротиноидами, с содержанием белка до 20%, отвечающие требованиям хлебопекарного производства. Крахмалистую фракцию с содержанием крхмала до 20% и золы более 2% целесообразно использовать в картонно-бумажном производстве. Предложенный подход к переработке зерна также снижает степень воздействия этого процесса на окружающую среду.
